Beloved in Appenzell, and sometimes served with Siedwurst, a pale white sausage with a hint of caraway, Chäshörnli is a creamy, cheesy, straightforward macaroni and cheese. Chäs is the Swiss-German word for “cheese,” and Hörnli means “little horns,” describing the shape of the macaroni.

Ingredients

  • 500 g (about 1 lb) macaroni
  • 1 tbsp butter<

Method

Bring a big pot of salted water to the boil, then add the pasta. Once it has cooked, strain the pasta into a colander and put the empty pot back on the stove over medium heat. Add the butter and as soon as it’s sizzling, sprinkle over the flour. Whisk well.

Once the flour has been incorporated, slowly pour in the milk, still whisking, then add the cheese. Stir until everything is creamy
