Here’s a well-seasoned tofu burger, updated to reflect my preferred tofu burger technique, which combines blended and coarsely grated tofu. Feel free to substitute kale, beet greens, spinach, or any other dark leafy greens for the chard here, but chard is my preference because I just love their stems and think that they’re underappreciated by most home cooks.
